triple berry cobbler
Yesterday I saw a post by IG user UncomplicatedChef, and she made this triple berry cobbler. I just had to take it. I had all the berries on had, so why not?
The cobbler is the pies rustic cousin that you can have now (no waiting to rest that pie dough!). This one is loaded with berries, and promises to be devoured quickly!
Things to note
The original recipe called for raspberries instead of blueberries. Honestly, use the berries you like or have on hand. Stick to 4-5 cups of berries.
I found the biscuit recipe to fall short of other recipes I have done. Nothing beats the Biscuit recipe by James Beard in my opinion. Recipe here.
The recipe did not call for a bake time. I baked at 350 for about 28 minutes. I put it in for 15 minutes and checked back every 5 minutes to make sure it wasn’t overtaking. I would suggest baking for about 25 minutes and add a few minutes if needed.
All in, I found this recipe took about an hour from prep to finish baking. That is a just wonderful.
I did an egg wash about half way through to get a better browning on my biscuits.
ingredients
2 cups strawberries
1 cup blueberries
1 cup blackberries
2 tbsp cornstarch
2 tbsp sugar
1 cup flour
1/4 cup sugar
3 tsp baking powder
6 tbsp butter, cold
3/4 cup heavy cream
