blood orange tartlets by dessert of the day

 

I hope everyone had a wonderful Easter!! My husband and I celebrated just the two of us, eating good food.

I made these cute little blood orange tartlets topped with whipped cream and a blackberry. Sooooo good! My husband is a huge fan of blood orange, so whenever I get the chance I dive in to make something special for him.

 

things to note

  • The dough was good, but feel free to substitute for your go-to sweet dough recipe.

  • Every oven is different, so I ended up blind baking for a couple minutes more. No soggy bottoms here.

  • The recipe calls to cook the custard until 160, but I found that this did not thicken it quite enough. I left it on for about 1 minute more. That allowed it to properly coat the back of the spoon.

  • I found that the custard made more than enough for the 6 tartlets. I had enough to fill 3 extra containers without dough.

 

ingredients

  • cream cheese tartlet dough

  • 2 large whole eggs, plus 3 large egg yolks

  • 1/2 cup fresh blood orange juice

  • 2 tbsp fresh lemon juice

  • 3/4 cup sugar

  • 1/2 cup unsalted butter

  • 2 tsp grated blood orange zest

  • whipped cream

Would I make this again?

Yes! Especially because our household LOVES blood orange.
