trust your gut

I learned to bake from my mother. She taught me to just go for it. We baked every weekend together for my whole childhood.

She taught me to bake by feel. What is baking by feel? It is pouring in the milk into the batter until mom says stop, scooping in the sugar without measuring, listening to the kitchen-aide mixer for when the sound changes to know its done mixing and just looking at a bowl of ingredients to know “that needs more flour”. Who does that? My mom!

It went against every fiber of my being as a kid. I wanted a recipe. I wanted order. I wanted to know all the rules before I took a step. Instead, she taught me a more important lesson: to trust my gut.
