ube pan de sal

 

Pan de sal is a filipino bread roll. It is in the same family of bread that the brioche lives in: enriched breads. Enriched breads are breads that contain: milk, butter, eggs, and or sugar.

I had a major whoopsies with this recipe. After the first proof, I found eggs on my counter. The eggs that were intended to be used in this recipe. DOH! Even though I left out the eggs, I think they turned out really well. And I cannot wait to make them again - with the eggs.

I used the recipe found at the little epicurean (thanks for sharing Anne!). Although the recipe is not for ube. I added the ube extract. Yes, just the extract gives that beautiful punch of purple color.

 

Would I make this again?

Yes! But, I would definitely add the eggs.
