This was a wonderful afternoon snack. The roasted cauliflower easily reheats to enjoy for a couple days. Just perfect.
Things to note:
I thought I had cream cheese, but when I went to make it my cream cheese was a no go. So, we enjoyed this without. I didn’t feel like we were missing anything, but I am certain that cream cheese add would be wonderful. If you are missing one of the cheeses, I wouldn’t fret too much.
My husband picked up groceries this week and picked up a flavored feta. It had some peppers in it. And If I wasn’t going to go to the store to get cream cheese, I certainly wasn’t going to go to pick up the correct feta. I believe the peppers were great in it. So if you have a creative shopper like I do, the recipe can totally take the modifications.
ingredients for whipped goat cheese
4 oz fresh goat cheese
3 oz cream cheese
3 oz feta cheese
1/2 cup heavy cream
2 tablespoons olive oil
ingredients for roasted cauliflower
2 1/2 cups dry white wine
1/3 cup olive oil
1/4 kosher salt
3 tablespoons fresh lemon juice
2 tablespoons unsalted butter
2 tablespoon crushed red pepper flakes
1 tablespoon sugar
1 bay leaf
1 hole head of cauliflower, trimmed,
course sea salt for serving.
