roasted cauliflower with whipped goat cheese by food52

 

This was a wonderful afternoon snack. The roasted cauliflower easily reheats to enjoy for a couple days. Just perfect.

 

Things to note:

  • I thought I had cream cheese, but when I went to make it my cream cheese was a no go. So, we enjoyed this without. I didn’t feel like we were missing anything, but I am certain that cream cheese add would be wonderful. If you are missing one of the cheeses, I wouldn’t fret too much.

  • My husband picked up groceries this week and picked up a flavored feta. It had some peppers in it. And If I wasn’t going to go to the store to get cream cheese, I certainly wasn’t going to go to pick up the correct feta. I believe the peppers were great in it. So if you have a creative shopper like I do, the recipe can totally take the modifications.

 

ingredients for whipped goat cheese

  • 4 oz fresh goat cheese

  • 3 oz cream cheese

  • 3 oz feta cheese

  • 1/2 cup heavy cream

  • 2 tablespoons olive oil

ingredients for roasted cauliflower

  • 2 1/2 cups dry white wine

  • 1/3 cup olive oil

  • 1/4 kosher salt

  • 3 tablespoons fresh lemon juice

  • 2 tablespoons unsalted butter

  • 2 tablespoon crushed red pepper flakes

  • 1 tablespoon sugar

  • 1 bay leaf

  • 1 hole head of cauliflower, trimmed,

  • course sea salt for serving.

Would I make this again?
