fish baked in foil by food52

 

A no watch way to prepare amazing fish? Yep! This is it! Fish takes on some wonderful flavors by the citrus and onions that surround it, but stays incredibly moist because of the foil wrap.

 

things to note

If you are looking for heat… wait until after the bake. This bake is really to cook the fish properly.

 

ingredients

  • 1/4 cup freshly squeezed lime juice

  • 2 teaspoons finely grated lime zest

  • 1/2 cup coarsely chopped fresh cilantro leaves and stems

  • 1/2 cup extra virgin olive oil

  • kosher salt and freshly ground black pepper

  • 2 large red onion, halved and thinly sliced

  • 3 limes, thinly sliced

  • 3 pounds fish fillets

  • 2 tablespoons dijon mustard

  • 2 tablespoons unsalted butter

Would I make this again?

Yes! This was great straight out of the oven and just as good turned into a fish salpicon for tacos on day 2 or 3.
