Pasta Night! Well, it was more of a pasta day! Ever since I saw an instagram post by Carolina Gelen with this 6 braided pasta I fell in love and I HAD TO MAKE IT! It’s like a challah loaf made into a pasta, or is it a pasta made to look like a challah loaf? Either way its a showstopper for sure!

Some notes

  • preferably 00, but all purpose will do in a pinch

  • We didn’t juice our own veggies as she suggested. I had flavored flours, so we had to adjust the recipe a bit to work. I used serious eats recipe for egg pasta to get the wet to dry ratios.

  • Carolina Gelen has a wonderful video on how to braid. I highly highly highly recommend using it.

  • We ended up cooking our pasta for nearly 20 minutes. So, try to get your braids super thin!

  • 25 grams curcumin powder mixed in 20 grams of water

  • 100 grams flour

  • 70 grams of eggs (2 egg yolks + egg whites)

  • dash of salt

grey pasta ingredients

  • 25 grams black goji powder mixed in 20 grams of water

  • 100 grams flour

  • 70 grams of eggs (2 egg yolks + egg whites)

  • dash of salt

pink pasta ingredients

  • 25 grams pitaya powder mixed in 20 grams of water

  • 100 grams flour

  • 70 grams of eggs (2 egg yolks + egg whites)

  • dash of salt

green pasta ingredients

  • 25 grams matcha tea powder mixed in 20 grams of water

  • 100 grams flour

  • 70 grams of eggs (2 egg yolks + egg whites)

  • dash of salt

purple pasta ingredients

  • 15 grams ube extract mixed in 5 grams of water

  • 100 grams flour

  • 70 grams of eggs (2 egg yolks + egg whites)

  • dash of salt

Would I make this again?

Yes, and No.

I loved making all of the pastas, YES! I loved the fun colors, and the unique challenge of making a 6 braid. However, the thickness of the pasta braid made it take forever to cook, and it ended up not being the best pasta. Pasta needs to be much thinner to cook properly. I will make the flavors again, but I will probably not braid in this manner again.
